This was one of my favorites while growing up.
Chill, peel, and slice the avocado in 1/4 in thick slices.
Toast bread to desired doneness - I normally use standard sandwich bread, but sliced italian, french, or even pumpernickel bread is delicious too.
While bread is still hot, arrange avocado slices, sprinkle with lemon pepper to taste, and top with another slice of bread.
Optional Ingredients
This simple delight becomes extra-delicious if you lay crispy sliced bacon on top of the avocado.
My personal preference for this sandwich is to have the avocado nice and cold, but the toast still hot from oven or toaster.
You may be tempted to add butter or mayonnaise to the toast, and perhaps you'd enjoy it that way, but keep in mind that avocado is already very fatty and the main purpose of butter or mayonnaise on a sadwich is to add oil or fat. Really, I believe an avocado sandwich is fine without the addition.
