When I describe this recipe to others, they usually give me the same response I gave when my grandmother described it to me. I said "Ew! That sounds gross!" And then I tried it. It's delicious.
Chill the pears in the refrigerator beforehand for best results.
Drain the water or syrup from the pear halves.
Place one or two pear halves each into small plates or bowls.
Place a dollop of mayonnaise, approximately 1 tablespoon per pear half, into the cavity left where the pit was removed. The mayonnaise should be slightly mounded out.
Sprinkle shredded cheddar over mayonnaise and pears and serve.
Substitutions:
You may wish to try substitutine cottage cheese, sour cream, plain yogurt, or creme fraiche for the mayonnaise.
This is a very simple, but surprisingly tasty recipe, which my grandmother Carani would occasionally serve as an appetizer before serving lamb. Normally, I advocate using fresh ingredients where possible, but in this case, the canned peaches are my favorite, and they make this dish take only minutes to prepare - as opposed to baking or otherwise cooking your own pears.
